♪♫♪It’s beginning to look a lot like Christmas, so I’m dreaming of White Christmas Chili…♪♫♪
As you can see, this chili recipe received it’s name for the pretty-snowy-white colored ingredients. Don’t let the white fool you though! Lots of healthy items! It also contains a few Magical Christmas Ingredients! There’s a special “snowflake” component that you probably won’t find in other chili recipes ~ The Grinch (Mr. Greenie himself) makes a small appearance ~ Plus a potent crimson Christmas spice adds a touch of holiday flavor!
Because I love to top chili with cheese and sour cream (both S items), I needed a substitute for beans to make this an S chili. the soft “snowflakes” are a perfect replacement! I do incorporate one can of beans in this recipe. Because this makes a huge pot of soup, you can partake in a few great white northern beans and still stay in S territory! There are only 11g of carbs in 1/2 cup so I doubt you will be eating 1/2 cup in 1 serving. If you’re uncomfortable with this, add more “snowflakes” and less beans.
To begin, start steaming your “snowflakes” (cauliflower) in about 1 cup of water.
Cut off yucky parts of thawed chicken breasts and cut into medium size pieces. Place in crockpot.
Add seasonings to the chicken: cumin, salt, oregano, pepper, Christmas Spice (ground cloves), paprika.
Once Cauliflower is soft, coarsely chop and add to crockpot (I sprinkled paprika on the cauliflower but you can just add it to the pot either way).
Chop up onion. Here’s how I like to chop my onion.
Add beans (with liquid) and here’s The Grinch’s big entrance (green chilies)!
Stir in chicken broth. Cook on low for 6-10 hours.
Serve with monterey jack cheese and sour cream if desired!
- 3-4 Chicken Breasts, Thawed
- 1 (16oz) Bag Frozen Cauliflower (Snowflakes!)
- ½ - 1 Sweet Onion, Chopped
- 1 (15.5oz) Can Great Northern Beans (with liquid)
- 1 (32oz) Chicken Broth
- 2 TBS Green Chilies (Gatta add some Grinch {green} to the White Christmas Chili!)
- 1 ½ tsp. Ground Cumin
- 1 tsp. Kosher Salt
- ½ tsp. Dried Oregano
- ¼ tsp. Pepper
- ⅛ tsp. Ground Cloves (Special Christmas Seasoning!)
- Sprinkle of Paprika
- Sour Cream
- Monterey Jack Cheese
- Start steaming your cauliflower in about 1 cup of water.

- Once Cauliflower is soft, coarsely chop and add to crockpot.
- Stir in chicken broth.
- Cook on low for 6-10 hours.
- Once chicken is cooked, use two forks and shred the pieces of chicken.
- Enjoy topped with monterey jack cheese and sour cream!
