White Cheese Crockpot Chicken

10 out of 10 stars for EASY crockpot recipes! This recipe is great for a quick meals while you’re planning and preparing your Thanksgiving feast! Best feeling ever when I can start a meal in the morning and know we will have hot, steamy dinner all ready at nightfall with no wait time to prepare! Plus it’s an excellent home-cooked-meal fragrance for the house and gives warm fuzzies. 😉

This chicken takes only a few minutes to prep and it’s sooooo yummy. {This is an S dish} I like to make Cauliflower And Broccoli Au Gratin as a side with my Almond Flour Cheese Biscuits (the flattened crispy biscuits)! You could also put this chicken and white creamy cheese sauce on top of Miracle Noodles (zero calorie/carb noodles)! Or just eat it with steamed veggies. However after making the Cauliflower/Broc Aug Gratin for the first time, not sure I’m ever going back to plain steamed veggies! 😉 And with THM, that’s totally and completely fine!

White Cheese Crockpot Chicken ~ S
  • 3-4 Chicken Breasts, thawed
  • 8oz Cream Cheese (I use ⅓ less fat)
  • ½ Stick Butter (4 TBS)
  • ½ Cup Almond Milk
  • ¾ Cup Parmesan Cheese (either shredded or the powdery kind in the container work great)
  1. Cut off yucky parts of chicken.
  2. Cut into med-small pieces and put in crockpot.
  3. Place rest of ingredients with the chicken in the crockpot.
  4. Cook on LOW for at LEAST 7 hours. I like to cook for about 8-10 hours. The longer you cook the softer the chicken will be. If you cook on high, or don't cook long enough, the chicken may be slightly rubbery.
