Huge shout out to At Home with Cherise for coming up with this *brilliant* THM recipe!! French Toast in a Mug is definitely one of my top 10 faves. Because it’s loaded with protein, this incredibly yummy creation is good for breakfast, lunch, dinner or a snack! Dessert too? Most definitely. My version is almost like a bread pudding, so I’m bound and determined to invent a creamy caramel sauce here at some point! 😉

It tastes so good it doesn’t even need syrup! I love eating it for breakfast with 2 fried eggs and turkey bacon. And of COURSE coffee;)
- 1 Egg
- 2 TBS Almond Flour
- ¼ tsp. Baking Powder
- 3 TBS Heavy Cream
- ¼ tsp. Cinnamon
- ¼ tsp. Vanilla
- ¼ tsp. Maple Extract
- 2 Packets Truvia
- 1 Tiny Scoop Now Better Stevia Extract Powder
- 1 TBS Coconut Oil
- Mix everything together except coconut oil. Once heavy cream is room temp or almost to room temp, add coconut oil and mix well. If the cream is really cold then it will harden the coconut oil. Oopsie:)
- Microwave for 1 minute and 40 to 50 seconds
- Dump onto a plate and smother in butter!
