Mexican Cheese Danish. Need I say more? Oh how I love. Reminds me of mexican doughnuts from my beloved “teenage-hood” restaurant back home. Totally and completely on THM plan, these will satisfy any sweet-tooth craving! Can you believe we’re on a diet y’all? Yeah me either.

Mexican Cheese Danish ~ S

Recipe type: Breakfast, Lunch, Dinner, Dessert or Snack!
Serves: 1
Ingredients
- 1 (5 Net) Carb Tortilla
- 1 to 1½ TBS Butter
- 1 to 1½ TBS Cream Cheese (I use ⅓ less fat) (1 TBS = ½ oz)
- 1 ½ Packets Truvia
- ¼ tsp. Cinnamon
Instructions
- Spread butter on both sides of the tortilla (just like you would for a grilled cheese. Oh the good ol days.)
- In a pan, cook over stove top on medium heat until warm and bubbly, then flip over and do the other side. You don’t want to over cook and want it slightly soft.
- Meanwhile put cream cheese in a bowl and microwave for 10 seconds. Add 1 packet of Truvia and stir. Microwave for another 8 seconds, stir.
- In a separate bowl, mix together the cinnamon and ½ packet of Truvia.
- Spread warm cream cheese over tortilla. Roll and slice.
- Sprinkle (or roll) slices in the cinnamon and sugar. The butter on the tortilla will make it stick.
- Enjoy!
Notes
Try different 5 net carb tortilla brands to see if one tastes better than the other. Also, I wouldn't recommend using Aldi Cinnamon. Doesn’t taste very good. One more thing, when I advertise that this is good for breakfast, lunch or dinner, I don't mean that this is the ONLY thing you eat for that meal. This is definitely a side item;) Example: I had it for breakfast this morning with scrambled eggs/cheese and turkey bacon. YUM!
We need to make this for Scott! Remember how we all used to love those cream cheese Danishes in a casserole dish made the unhealthy way? :/
