Egg Sandwich

A favorite quick breakfast or lunch entrée is the classic egg sandwich! Before THM, I used those soft & delish Arnold sandwich thins…full of carbs. *sigh* However the other day I was craving one of these sandwiches and a lightbulb blinked on in my head. Hellooo, it’s been right in front of me all this time! Use a half of a Joseph’s Pita!! Duh Jen! So I quickly whipped up a fried egg and smothered some butter and cheddar cheese onto the pita, added the hot egg, warmed it up in the microwave for 15-20 seconds and aahhh, I had my warm soft egg sandwich back! Paired with a few crunchy “cheese crackers” and ice cold sweet oolong tea = yeeeuuss.

If you have a Publix near by, they have the best price when buying Joseph’s Pita. If you have to order online, amazon sells them as well (affiliated link).

Egg Sandwich ~ S
Serves: 1
  • ½ Joseph's Pita
  • Butter to spread on pita
  • 1-2 Fried or Poached Eggs
  • Cheddar Cheese
  1. Cook eggs either fried or poached.
  2. Spread butter on pita.
  3. Slice cheese and place on butter.
  4. Add warm eggs.
  5. Heat sandwich in microwave for 15-20 seconds.
  6. Enjoy!

    I have been doing this for a long time! I even put a slice or two of bacon in there…also sometimes use a low cab tortilla and make sort of an egg quesadilla! Tomorrow morning! I would do it tonight but Joe is really not into breakfast for dinner! Boo…

    My dad always made fried egg sandwiches when we got home late or too tired to make a real dinner. Yum! He put sliced tomatoes on them and lots of mayo.
    My DH isn’t a fan. How crazy is that!
    So now I have a good idea for something for lunch!
