White Christmas Chili ~ S
Recipe type: Crockpot
Serves: 6-8
  • 3-4 Chicken Breasts, Thawed
  • 1 (16oz) Bag Frozen Cauliflower (Snowflakes!)
  • ½ - 1 Sweet Onion, Chopped
  • 1 (15.5oz) Can Great Northern Beans (with liquid)
  • 1 (32oz) Chicken Broth
  • 2 TBS Green Chilies (Gatta add some Grinch {green} to the White Christmas Chili!)
  • 1 ½ tsp. Ground Cumin
  • 1 tsp. Kosher Salt
  • ½ tsp. Dried Oregano
  • ¼ tsp. Pepper
  • ⅛ tsp. Ground Cloves (Special Christmas Seasoning!)
  • Sprinkle of Paprika
  • Sour Cream
  • Monterey Jack Cheese
  1. Start steaming your cauliflower in about 1 cup of water.
  2. Cut off yucky parts of thawed chicken breasts and cut into medium size pieces. Place in crockpot.
  3. Add seasonings to the chicken: cumin, salt, oregano, pepper, ground cloves, paprika.
  4. Chop up onion and add to crockpot.
  5. Add beans (with liquid) and green chilies.
  6. Once Cauliflower is soft, coarsely chop and add to crockpot.
  7. Stir in chicken broth.
  8. Cook on low for 6-10 hours.
  9. Once chicken is cooked, use two forks and shred the pieces of chicken.
  10. Enjoy topped with monterey jack cheese and sour cream!
This is a mild chili. If you're into spicy chili, feel free to add cayenne pepper and spicy green chilies!
