Chocolate PB Cake…for Breakfast!

Some mornings, very few mornings actually, so more like .1% of morinigs, but some mornings, I wake up and say to myself, “boy would it be nice to have a piece of cake for breakfast.” Well, my dream on those .1% of mornings finally came true today. Thank you THM!!

Can NOT believe how good this light and fluffy, (zero sugar) “sugary”, chocked full of protein goodness tastes. If you’re in the mood for just a chocolate cake (picture below), leave out the peanut flour and add a TBS of protein powder. Top with cream cheese frosting or whipped cream and INDULGE!

Chocolate Cake

 

1 TBS Protein Plus Peanut Flour (yellow bag) OR 1 TBS Protein Powder if you don’t want the PB taste!

1 TBS Coconut Flour (Best price is amazon.com)
2 TBS Truvia (6 packets) OR 4 tsp. THM Sweet Blend
(Best price for Truvia: Sam’s Club – 300ct packets for $13.78)
1 1/2 TBS Cocoa Powder (you can add 1/2 TBS more if you want it darker)
(Pricing: You can most likely find weekly sales at various grocery stores, or buy a large container at Sam’s Club.)
1/2 tsp. Baking Powder
1/2 tsp. Glucomannan (optional, Best Price and Brand) OR 1/4 tsp. Xanthan Gum
Dash of Salt
1/3 Cup Egg Whites
1 TBS Water
1/4 – 1/2 tsp Caramel Extract (Best Price: Watkins Brand from Walmart)

1. In a microwave-safe bowl (keep in mind it will become whatever shape bowl you use), mix the dry ingredients well. Add liquid ingredients and mix well with a fork.

2. Microwave for about 1 1/2 minutes. Don’t cook too long or it will dry out the cake. If the middle is a little gooey, that’s ok!

3. Top with heavy whipping cream (liquid or whipped) or melted all natural peanut butter or one of my Reese’s Center PB Candies (put the candies on the hot cake so it will melt…yuum) or cream cheese frosting!

Instructions

If you add heavy cream, a Reese's Center Candy, or cream cheese frosting it becomes an S.
