Chicken & Quinoa Soup ~ E

Comfort food is a must for this girl. I’m so excited to share this incredibly delicious bowl of soup with you. Perfect for lunch or dinner. Or if you’re sick it’s an awesome alternative to chicken and noodle soup. Quinoa (when soaked in water the night before) is so soft and tasty! Plus it has MANY health benefits. Love it.

Chicken & Quinoa Soup ~ E
Recipe type: Lunch/Dinner
Serves: 4-5
  • 3 Chicken Breasts (I cut mine in pieces)
  • McCormick’s Perfect Pinch Seasoning Original Chicken (maybe about 1 TBS)
  • 1 ¼ Cup Quinoa, soaked overnight in water (I use Ancient Brand Harvest Quinoa, Organic, 12oz from Walmart - $5.54 per box)
  • 1 (32oz) Carton of Chicken Broth
  • 1 tsp. Salt (or salt to taste)
  • Sprinkle of Dried Thyme
  • ½ to 1 TBS Parsley
  • 2 – 4 TBS White Cooking Wine
  • 4-6 Carrots (regular size) chopped
  • ½ Cup Water (from the Carrots)
  1. Soak Quinoa in water over night. Then strain water and rinse well.
  2. Chop carrots and put in a pot with ½ to 1 cup of water and steam until tender.
  3. Cut up raw chicken and put in crockpot. Sprinkle lots of Perfect Pinch Seasoning all over the chicken.
  4. Add rest of ingredients to crockpot and cook on high for 3-4 hours.
  5. Once chicken is cooked, use two forks and shred chicken.
  6. Enjoy!
