Cauliflower & Cheese Please:)

And THIS, my friends, is the only way to eat cauliflower! Ok well that’s not entirely true. But it’s definitely one kicker of a way!  So whenever you’re craving mac & cheese (like I do on numerous occasions), whip this up! You will NOT be disappointed. Plus it’s SO easy! For all you THMer’s, this is my version of “Loaded Cauliflower”. Oh yeah, to everyone else, did I mention this is diet food? Yes, yes it is. 😉 Learn more about THM here!


Cauliflower & Cheese ~ S
Serves: 5-6
  • 2 (16oz) bags frozen cauliflower
  • 1 stick butter
  • 8oz cream cheese (I use ⅓ less fat)
  • ¼ cup chicken broth
  • Pinch of salt (you don’t need a lot because there is salt in the cheese and butter)
  • 2 cups shredded cheddar cheese
  • ¼ cup heavy cream
  • 4-6 pieces of real bacon, cooked in microwave until crunchy (Optional)
  1. Put frozen cauliflower in a large pot with about 3 cups of water and steam with lid on until very soft. The reason for lots of water is because the water will evaporate quickly and you don’t want it to burn (believe me…I know).
  2. Melt butter and cream cheese in another large saucepan. Stir well. Stir in broth until combined and smooth. Add Reduce heat slightly and add shredded cheese and heavy cream. It will become very thick.
  3. Remove from heat and add all the cooked cauliflower and mix well. It’s ok if the cauliflower mashes up a little. If using bacon, add it (just crumble in your hand).
  4. Pour in a greased 9x13 baking dish and cook on 350 for 30 minutes until golden brown and bubbly. Or if using convection, 300 for 30 minutes.
I half this recipe all the time for a quick side dish or lunch.
