Broccoli and Cheese

Veggies and I didn’t get along too well until I was introduced to THM. I knew I needed to eat them but veggies were always bland and pretty much drudgery. Today’s side dish kinda changes all that, for me at least! You could even eat this for lunch with a protein drink/shake if you want! It’s that tasty. Not to mention extremely fast and easy to prepare.

Best price for broccoli (I buy the big bag of frozen broccoli), shredded cheddar cheese and Light Laughing Cow Cheese = Sam’s Club! Sometimes I can find coupons for LLCC and there are the occasional 2/$5 sales at Publix/Walmart to watch out for.

Broccoli and Cheese

Broccoli and Cheese ~ S
Serves: 1
  • ¾ to 1 Cup Broccoli
  • ¼-1/2 Cup Water
  • 2-3 TBS Shredded Cheddar Cheese
  • 1 Light Laughing Cow Cheese (I use creamy swiss but experiment with other flavors if you want!)
  1. Steam broccoli in water until soft.
  2. Plate hot out of the pot and mix in cheddar and cow cheese.
  3. The End.
If you just love salt, then you can add some. With the cheese it was salty enough for me! Also, the cheddar cheese makes this an S.
